Vitamin E is added to food products as a nutrient, but more often it is added for its anti-oxidant properties, protecting oils and fats from oxidation.
Tocopherols come in various forms only slightly different from the ?-tocopherol shown in the structural formula above. ? and ? forms differ in where the methyl groups are attached to the ring structure. An ingredients list may single out the ? form, or may just say "mixed tocopherols".
