Description

White, odorless, sweet-tasting powder.

Tagatose is a stereo-isomer of fructose, meaning it has the same formula, but a different shape.

It is almost as sweet as sugar (92%), and browns like sugar (unlike other sugar replacements such as sugar alcohols).

Uses

Tagatose is used as a sweetener in low calorie foods.

Like sugar alcohols, it does not affect insulin levels. Also like the sugar alcohols, it does not promote bacterial growth or tooth decay, so it finds use in toothpastes, mouthwash, and other oral hygiene products.
