Description

Salatrim is a fat (triglyceride).

Salatrim is not as easily absorbed as other fats. This is because the main long chain fatty acid in it is stearic acid which by itself is less well absorbed than others, and because it is even less well absorbed when combined with short chain organic acids like acetic (with 2 carbons), propionic (with 3 carbons), and butyric (with 4 carbons) acids.

The available calories from Salatrim are only 55% of those from normal fats.

Short chain organic acids have less energy storage capacity than long chain fatty acids. The very short chains mentioned above are closer to carbohydrates (in calories) than they are to fats.

Salatrim is a mixture of many triglycerides that have the characteristics mentioned above.

Uses

Salatrim is a fat, and can be used where fats are used in cooking.

Because it is partially absorbed, Salatrim does not have the problems associated with Olestra. It does not have any laxative effects, and it does not prevent the absorption of fat-soluble vitamins and carotenoids.
