How about plans for a simplified theremin? The theme could be "miniaturized", "made of household parts", or "made on a budget". That'd be nifty.

And possibly a continuing theme of electronic instruments, to be operated without touching. One could use fans and wind turbines, magnets and hall sensors, lasers and light sensors, etc.
